Hidden gem right on cowgate! Lovely staff, atmosphere, and food. They have grilled skewers and beer/cocktail towers - what else could you ask for? Great prices for central Edinburgh. They even have karaoke rooms upstairs you can rent out by the hour that have smoke machines!!! Ambiance is amazing and the staff is wonderful. 10/10

Incredible karaoke booths, big selection of asian meals (all were cooked perfectly - recommend the aubergine!) and fun space-themed decor. The staff are all lovely too :)

The food is so delicious, authentic and tasty. Love the spices and the BBQs, especially the beer tower They have a nice atmosphere, all video game are free to play! Their service is good, food came quick

Absolutely love this place, it’s my girlfriend and I’s favourite spot for a delicious meal! The interior has got such cool decorations it was a mind bending experience walking in there for the first time. The selection of food is incredible, we really enjoy trying all these dishes that we never before thought we would get in Edinburgh. The flavour, texture, seasonings are all perfect. The staff are super friendly and very accommodating. Overall I highly recommend The Carbon, cocktails are good too and they have a 2 for 1 deal!

Chinese-style skewers absolutely coated in spices - delicious! Lots of really authentic and adventurous choices, balanced with plenty of familiar things such as lamb, aubergine, pork belly, and more. On top of the skewers, other options such as the scallop and garlic noodles were great - overall a really nice mix of dishes. The waiters were all really friendly too! To whoever may be reading... if this place opened up a wee side window or something to encourage Cowgate pub/club crowd in later at night and just served them some default skewers, I think they'd make an absolute killing ;)

Such a fun place for food! Fun experience with delicious skewers. Wide range of food on their menu with so much choice for drinks! We had a great time

Hidden gem located in the heart of Edinburgh! Didn’t try the food on this occasion, but the drinks were good. Ordered the cocktail tower with vodka, passionfruit and honey which was nice. Unique interior with a space theme going on - lots of stars & moons on the ceilings. Also have party rooms which you can rent out for events

That Eggplant!! I have never had such an amazing aubergine dish in my life -- the grilled eggplant was out of this world. We also had hot pot, chicken wings and some beef skewers, but the stand out was the eggplant. Perfectly grilled, with a delicate yet delightful sauce and topped with mounds of garlic and cilantro -- I still am dreaming of this aubergine....until we meet again soon. Please don't ever change that dish -- I'd fly to Edinburgh just to meet "you" (eat you!) again! ;) (yes, the photograph of the aubergine looks fluorescent pink but this is just because the establishment is filled with strange neon lights and makes you feel you're in some weird nightclub!!)
